Happy Friday



I woke up this morning and decided that it was time for me to do something nice for everyone in the office.  It's Friday, I'm moving this weekend, and I've spent a lot of my time this past week with my favorite man-- so obviously the nicest and best thing to do for my coworkers is bring in donuts.

Coconut, Chocolate Icing, Glazed, Boston Cream, Jelly, Cinnamon Sugar, Apple Fritter, Maple Brown Sugar...... I think you get the idea.

The truth is, something so small really goes a long way when it comes to the workplace. Something as little as a box of donuts, or even home made brownies can really up the morale on a workday. So go ahead, lighten up your office next week with a treat because food is love.

Turkey Tacos with Homemade Guacamole

Saturday night, after a long day of hiking and hanging with my bf, we decided to stay in and have a mexican night. Why not, right? The decision for tacos was something we both had in mind, so it was a no-brainer. We decided to get ground turkey because it was the "healthier" option, and because I sometimes have weird reactions to red meat (I blame my mom's side for my stomach issues-- it doesn't stop me most of the time, though).

I always like to make my own Guacamole, mostly because A) it's easy and B) I make the best guac (you can be the judge), plain and simple.



What you need:

1 lb ground Turkey (lean)
1 Taco Seasoning Packet
1 Pack Mexican Blend Shredded Cheese
1 Can Black Beans
2 Large, ripe Avocados
4 Limes
1 Container of Fresh Salsa (or whichever type you prefer)
2 Red Bell Peppers
2 Yellow Bell Peppers
1 Yellow Onion
1 Head Iceberg Lettuce
Garlic Powder
Flour or Corn Tortillas
Hard Shell Tortillas

Instructions:

Wash iceberg lettuce and cut shreds to use as a topping for the tacos. Leave in a bowl to the side.
Dice the red and yellow bell peppers into small pieces
Dice yellow onion

Combine the peppers and onion into a medium skillet on medium heat with a tbsp of Olive Oil. Sautee until fully cooked. Sprinkle with salt and pepper.

Black Beans
In a medium sauce pan, pour can of beans and leave on low heat while you prepare the rest of the taco ingredients. Stir every 3-4 min until hot.

Homemade Guacamole
Cut avocado in half. Take out the pit and peel the outer skin off. Place each half in a bowl and add the juice of 1 whole lime. Add 1-2 tbsp of salsa, garlic powder (to your liking), and mix well with a fork so the guacamole stays chunky. Add salt to taste.

Taco Meat
Take a large skillet and follow the instructions on the Taco Seasoning packet. Cook meat in skillet on Medium heat until fully browned and separated into little pieces. Add 2/3 cup water and stir in taco seasoning. Simmer on low for 3-6 min or until Turkey is fully covered in taco seasoning.

Taco Building
In a flour or corn tortilla, spread a layer of guacamole in the middle and put a spoonfull of black beans (drained) on top. Spread a layer of the bell pepper and onion mixture on top of the beans, and then add Taco meat on top.

You can even prepare this like a burrito bowl without the Tortilla if you prefer :) You may add cheese, lettuce, or salsa on top to your liking. Once you've built the perfect taco, spice it up with a margherita or other fun drink and you've got yourself the perfect mexican night in!

Eataholic Epiphany

I came to a point this morning while sitting at my 9-5 job where I started wondering, what the hell am I doing? I've hopped around trying to find a means of income where I enjoy to spend my time, but even after working for glamorous organizations with mucho money potential, I still dream of a day I can wake up and control my own calendar, pursue my own interests, and not deal with a corporate structure. Our 20s are supposed to prepare us for that, but having a hobby on the side is a great way to keep yourself happy in the meantime.

One thing that keeps me going in the office is browsing the internet daily for new things that are of interest to me, but one subject in particular has always brought excitement to my life; Food. No matter where I am, food is on my mind. My favorite thing about food is the conversation that comes with it, other than the taste (obviously). I could talk about food all day, and my friends can surely back me up on that. I can thank my family for my love for food because it has always been something that brings us together. Not to mention, my Uncle and Brother are both chefs, and I frequently helped my Mom in the kitchen growing up. Holidays, Birthdays, special events- you name it. The main question for these events has always been "What are we eating?" Even what to wear to these gatherings depends on the food that will be served (I will NEVER wear jeans to Thanksgiving. Only Maxi dresses or stretchy pants allowed). 

So 3 years after my last post, I am back where I started- pursuing an outlet online where I can share my love for food and maybe some good recipes for every kind of craving. Cooking has always been a hobby for me, so I hope some of my tricks make you as happy as it makes me!

avocado and tomato tortilla snack

It's 10:00PM. I am bored and hungry. I already ate dinner at like 7 (salmon- delish) so I don't want to eat anything heavy. What's in the fridge? Salsa, a variety of cheeses (always a must), apples, onions, lemons, tomatoes, vodka, and some random condiments. Avocado and some other fruit in fruit bowl next to stovetop. Whole grain bread and mini tortillas.

Hmm... IDEA! avocado/guacamole tacos without meat. The outcome was AMAZING.

Cut up an avocado into half-inch squares and put into a bowl
take a tomato and cut that up too. try and take the seeds out though because the pulp can cause excess goopiness.
Take a little bit of onion and chop it up and throw that in with the avocado and tomato.
put some lemon or lime juice, or both, in for flavor.

heat up non-stick frying pan on high heat and put a little butter to melt in the center
once the butter is melted, take a tortilla and put it in the pan on one side for 2 min, and then flip it onto the other side. After you flip it, put some cheese that you have on it and wait for it to melt before taking the tortilla off of the skillet. Make sure that you start to see the tortilla fill up with air pockets- thats how you know they are almost done.

Put avocado/tomato/onion mixture on the tortilla, and garnish with some salsa. I prefer to use salsa with black beans and corn in it and it reallllllyy adds flavor to this. fold like a taco and ENJOY. ... it may be a weird late night snack but I don't feel guilty eating it and it is seriously delicious.

2 words: Fried Oreo

Have you ever had a fried oreo? If you have, why have you been hiding this from me for so long? And, if you haven't you need to get on that. All I can say is wow. I love oreos with milk, its one of the best snacks of all time. I was recently introduced to a new way to eat these amazing creme-filled chocolate cookies- fried. Fried and covered in powdered sugar, they are definitely the best munchie snack ever- or great if you are PMS-ing. I got them on the Ocean City boardwalk, but I was told they can be found anywhere.

If you want to get serious, try Golden Oreos deep-fried. OH MY GOD its like a flavorgasm on your tastebuds.



Ingredients

  • 2 quarts vegetable oil for frying
  • 1 large egg
  • 1 cup milk
  • 2 teaspoons vegetable oil
  • 1 cup pancake mix
  • 1 (18 ounce) package cream-filled chocolate sandwich cookies (such as Oreo®)

Directions

  1. Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  2. Whisk together the egg, milk, and 2 teaspoons of vegetable oil in a bowl until smooth. Stir in the pancake mix until no dry lumps remain. Dip the cookies into the batter one at a time, and carefully place into the hot frying oil. Fry only 4 or 5 at a time to avoid overcrowding the deep fryer. Cook until the cookies are golden-brown, about 2 minutes. Drain on a paper towel-lined plate before serving.
