Happy Friday



I woke up this morning and decided that it was time for me to do something nice for everyone in the office.  It's Friday, I'm moving this weekend, and I've spent a lot of my time this past week with my favorite man-- so obviously the nicest and best thing to do for my coworkers is bring in donuts.

Coconut, Chocolate Icing, Glazed, Boston Cream, Jelly, Cinnamon Sugar, Apple Fritter, Maple Brown Sugar...... I think you get the idea.

The truth is, something so small really goes a long way when it comes to the workplace. Something as little as a box of donuts, or even home made brownies can really up the morale on a workday. So go ahead, lighten up your office next week with a treat because food is love.

Turkey Tacos with Homemade Guacamole

Saturday night, after a long day of hiking and hanging with my bf, we decided to stay in and have a mexican night. Why not, right? The decision for tacos was something we both had in mind, so it was a no-brainer. We decided to get ground turkey because it was the "healthier" option, and because I sometimes have weird reactions to red meat (I blame my mom's side for my stomach issues-- it doesn't stop me most of the time, though).

I always like to make my own Guacamole, mostly because A) it's easy and B) I make the best guac (you can be the judge), plain and simple.



What you need:

1 lb ground Turkey (lean)
1 Taco Seasoning Packet
1 Pack Mexican Blend Shredded Cheese
1 Can Black Beans
2 Large, ripe Avocados
4 Limes
1 Container of Fresh Salsa (or whichever type you prefer)
2 Red Bell Peppers
2 Yellow Bell Peppers
1 Yellow Onion
1 Head Iceberg Lettuce
Garlic Powder
Flour or Corn Tortillas
Hard Shell Tortillas

Instructions:

Wash iceberg lettuce and cut shreds to use as a topping for the tacos. Leave in a bowl to the side.
Dice the red and yellow bell peppers into small pieces
Dice yellow onion

Combine the peppers and onion into a medium skillet on medium heat with a tbsp of Olive Oil. Sautee until fully cooked. Sprinkle with salt and pepper.

Black Beans
In a medium sauce pan, pour can of beans and leave on low heat while you prepare the rest of the taco ingredients. Stir every 3-4 min until hot.

Homemade Guacamole
Cut avocado in half. Take out the pit and peel the outer skin off. Place each half in a bowl and add the juice of 1 whole lime. Add 1-2 tbsp of salsa, garlic powder (to your liking), and mix well with a fork so the guacamole stays chunky. Add salt to taste.

Taco Meat
Take a large skillet and follow the instructions on the Taco Seasoning packet. Cook meat in skillet on Medium heat until fully browned and separated into little pieces. Add 2/3 cup water and stir in taco seasoning. Simmer on low for 3-6 min or until Turkey is fully covered in taco seasoning.

Taco Building
In a flour or corn tortilla, spread a layer of guacamole in the middle and put a spoonfull of black beans (drained) on top. Spread a layer of the bell pepper and onion mixture on top of the beans, and then add Taco meat on top.

You can even prepare this like a burrito bowl without the Tortilla if you prefer :) You may add cheese, lettuce, or salsa on top to your liking. Once you've built the perfect taco, spice it up with a margherita or other fun drink and you've got yourself the perfect mexican night in!
