avocado and tomato tortilla snack

It's 10:00PM. I am bored and hungry. I already ate dinner at like 7 (salmon- delish) so I don't want to eat anything heavy. What's in the fridge? Salsa, a variety of cheeses (always a must), apples, onions, lemons, tomatoes, vodka, and some random condiments. Avocado and some other fruit in fruit bowl next to stovetop. Whole grain bread and mini tortillas.

Hmm... IDEA! avocado/guacamole tacos without meat. The outcome was AMAZING.

Cut up an avocado into half-inch squares and put into a bowl
take a tomato and cut that up too. try and take the seeds out though because the pulp can cause excess goopiness.
Take a little bit of onion and chop it up and throw that in with the avocado and tomato.
put some lemon or lime juice, or both, in for flavor.

heat up non-stick frying pan on high heat and put a little butter to melt in the center
once the butter is melted, take a tortilla and put it in the pan on one side for 2 min, and then flip it onto the other side. After you flip it, put some cheese that you have on it and wait for it to melt before taking the tortilla off of the skillet. Make sure that you start to see the tortilla fill up with air pockets- thats how you know they are almost done.

Put avocado/tomato/onion mixture on the tortilla, and garnish with some salsa. I prefer to use salsa with black beans and corn in it and it reallllllyy adds flavor to this. fold like a taco and ENJOY. ... it may be a weird late night snack but I don't feel guilty eating it and it is seriously delicious.

2 words: Fried Oreo

Have you ever had a fried oreo? If you have, why have you been hiding this from me for so long? And, if you haven't you need to get on that. All I can say is wow. I love oreos with milk, its one of the best snacks of all time. I was recently introduced to a new way to eat these amazing creme-filled chocolate cookies- fried. Fried and covered in powdered sugar, they are definitely the best munchie snack ever- or great if you are PMS-ing. I got them on the Ocean City boardwalk, but I was told they can be found anywhere.

If you want to get serious, try Golden Oreos deep-fried. OH MY GOD its like a flavorgasm on your tastebuds.



Ingredients

  • 2 quarts vegetable oil for frying
  • 1 large egg
  • 1 cup milk
  • 2 teaspoons vegetable oil
  • 1 cup pancake mix
  • 1 (18 ounce) package cream-filled chocolate sandwich cookies (such as Oreo®)

Directions

  1. Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  2. Whisk together the egg, milk, and 2 teaspoons of vegetable oil in a bowl until smooth. Stir in the pancake mix until no dry lumps remain. Dip the cookies into the batter one at a time, and carefully place into the hot frying oil. Fry only 4 or 5 at a time to avoid overcrowding the deep fryer. Cook until the cookies are golden-brown, about 2 minutes. Drain on a paper towel-lined plate before serving.
