avocado and tomato tortilla snack

It's 10:00PM. I am bored and hungry. I already ate dinner at like 7 (salmon- delish) so I don't want to eat anything heavy. What's in the fridge? Salsa, a variety of cheeses (always a must), apples, onions, lemons, tomatoes, vodka, and some random condiments. Avocado and some other fruit in fruit bowl next to stovetop. Whole grain bread and mini tortillas.

Hmm... IDEA! avocado/guacamole tacos without meat. The outcome was AMAZING.

Cut up an avocado into half-inch squares and put into a bowl
take a tomato and cut that up too. try and take the seeds out though because the pulp can cause excess goopiness.
Take a little bit of onion and chop it up and throw that in with the avocado and tomato.
put some lemon or lime juice, or both, in for flavor.

heat up non-stick frying pan on high heat and put a little butter to melt in the center
once the butter is melted, take a tortilla and put it in the pan on one side for 2 min, and then flip it onto the other side. After you flip it, put some cheese that you have on it and wait for it to melt before taking the tortilla off of the skillet. Make sure that you start to see the tortilla fill up with air pockets- thats how you know they are almost done.

Put avocado/tomato/onion mixture on the tortilla, and garnish with some salsa. I prefer to use salsa with black beans and corn in it and it reallllllyy adds flavor to this. fold like a taco and ENJOY. ... it may be a weird late night snack but I don't feel guilty eating it and it is seriously delicious.
